Avocado on Toast!

Thanks to Jacob, 16, for sending in this great idea for a delicious (and healthy) breakfast or lunch. Suitable for vegans, avocados are packed full of vitamins (including B, C, E and K) and potassium, while wholegrain bread can be an excellent source of fibre!

Jacob adds flavour by mashing the avocado with finely chopped onions, garlic and a small splash of olive oil. Yum yum!
